]]>The bottom of the little cups in my mini-muffin tin fit a Nilla Wafer perfectly. I sprayed the pan with cooking spray then plopped in a Nilla Wafer. I then used strips of parchment paper to wrap the sides (the cooking spray helped them ‘stick’ until I could get the filling in). My mini muffin pan fits perfectly atop a 10 x 18 glass casserole dish so I put the boiling water in that.
I’m mostly worried about cooking it the right amount of time since they’re minis. I guess we’ll see. The batter tastes awesome. I just hope my mini-cheesecakes do too!
